Perfect Summer Fruit Salad

From allrecipes.com  By Nicole Graham Holley

I made this recipe over July 4th. It was cold, refreshing & the sauce is wonderful.

You could easily take this recipe & make an activity out of it. Have residents help with cutting the fruit & placing it in the bowl. The AD can do the cooking.

Make this in the am. Place in refrigerator & then in the afternoon gather residents up to eat. This should be in the refrigerator for at least 3 hours.

2/3 C fresh orange juice

1/3 C fresh lemon juice

1/3 C packed brown sugar

½ tsp grated orange zest

½ tsp grated lemon zest

1 tsp vanilla extract

2 C cubed fresh pineapple

2 C strawberries, hulled & sliced

3 kiwi fruit, peeled & sliced

3 bananas, sliced

2 oranges, peeled & sectioned

1 C seedless grapes

2 C blueberries

Bring orange juice, lemon juice, brown sugar, orange & lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, simmer until slightly thicken about 5 mins. Remove from heat stir in vanilla extract. Set aside to cool

In a clear glass bowl, just for looks, place all the fruit into the bowl. Pour the sauce over all the fruit. Then gently mix all the fruit & sauce together. Cover & place in refrigerator for 3 to 4 hours.

You can use any fruit, peaches, melon etc.

The recipe for this fruit salad sounds absolutely delicious, I think we are going to use this for our cookout for the resident this Friday! Thanks again for sharing this, I will be sure to update you on what the residents think!

Thank you for correcting the information that was released. I recently took the test for certification with NAAPCC and it was a very comprehensive and thorough test. It was not a simple easy test to get you certified. You had to know the information in order to complete and pass. I would recommend this avenue to anyone especially if finances are a struggle for MEPAP I & II. I did purchase the book for long-term care seventh edition and without that I would have struggled.

Celeste is awesome!! Anytime i have a question she gets right back with me and she is very informative. At first I didn't know if i was going to like the new course just for the fact my MEPAP course was the own pace and I work Full time plus have 3 kids. But i am loving it! It is very structured and with due dates I feel like i am holding myself more accountable for completed assignments sooner than later. It has actually been a beneficial change for me.. Thanks so much!!!

Good Evening I wanted to let you know that I had completed mepap 1 and had only a couple weeks left of mepap 2 so I had looked at path 2 and have taken the activities test and passed so just sending in the application. I wanted to thank you for giving all your time to us even while Kathy was ill. It didn't go unnoticed, you was a great support and helpful at ideas or even different ways of changing thoughts to positive while feeling defeated. Thank You Stacey Passa AP-BC
